Golden Crepes with Orange Glaze 🍊🥞

Ingredients
For the Crepes:
1 cup (125 g) all-purpose flour
2 large eggs
1¼ cups (300 ml) milk
2 tbsp melted butter
1 tbsp sugar
1 tsp vanilla extract
Pinch of salt
Butter or oil, for cooking
For the orange glaze
½ cup (120 ml) fresh orange juice
1–2 tsp finely grated orange zest
3 tbsp sugar
2 tbsp butter
1 tbsp honey
1 tsp cornstarch mixed with 1 tbsp water (optional, for a thicker glaze)
To serve:
Orange slices
Powdered sugar
Optional: vanilla ice cream or whipped cream
Method
Make the batter:
Whisk the flour, sugar, and salt. Add the eggs and gradually whisk in the milk until smooth. Stir in melted butter and vanilla. Let the batter rest for 15–20 minutes.
Cook the crêpes:
Heat a lightly buttered non-stick pan over medium heat. Pour in about ¼ cup of batter and quickly swirl the pan to spread it thinly.
Cook for about 1–2 minutes, until the edges are lightly golden. Flip and cook the other side for about 30 seconds. Repeat with the remaining batter.
Make the orange glaze:
Add orange juice, zest, sugar, butter, and honey to a small saucepan. Simmer gently for 3–5 minutes, stirring occasionally. For a thicker glaze, stir in the cornstarch mixture and cook for another minute.
Assemble:
Fold the warm crêpes into quarters or roll them gently. Arrange on a serving plate and spoon the warm orange glaze generously over them.
Finish:
Dust lightly with powdered sugar and garnish with fresh orange slices.
Serving tip:
Serve warm with a scoop of vanilla ice cream; the cold, creamy ice cream with the warm citrus glaze is delicious. 🍊🥞
