I could play Devil advocate and ask why Sanji suddenly understand that he needs ACOC for the armor when it has been made clear that he needs just to do lasting damage.
Also, why does he specified COA instead of ACOC in his monologues?
I don’t think Sanji realizes he is using conquers coating until Killingham informs him that he needs it to break his armor. When Sanji then breaks his armor is when it finally clicks for him, and now he’s aware of it

None of the 19 weapons are made from "Omen". Omen is Imu's military might which is the black flames.
The reason we see Killingham & Sommers having Omen around the weapons is due to them being granted Omen hence the usage.
They're just famed weapons which unique abilities.
The spear is made of omen(the counter to acoc) so it matters not that it can reform it should be strong enough to counter Sanjis in the same way sommers was confident it would counter zoro
