Teh pekat tu for tannins, balsamic vinegar for the acidity, grape notes and sulfites. Both present in red wine. Tp yg grape flavour from balsamic vinegar tu tak kuat la, the closest would be Grape Must(mushed up grapes). Grape juice yg sold in supermarket got too much sugar.

Mafaldine is the best for bits of meat lekat dkt the pasta. Actually ada technique of masa dah masak pasta and sauce, combine it and stir/toss it rigorously utk emulsify the starch and sauce to make it stick even more.
Tak suka bila orang guna spaghetti untuk Bolognese sebab kuah dia tak lekat (?). I don't think spaghetti is the right pasta for that dish. Lapar la pulak.
