RIP Ada Yonath. I gave a commencement speech at UF a few weeks ago. Here is a passage inspired by Ada “Commencement speakers are also expected to give advice. I once heard Ada Yonath speak to a group of young scientists. She is the Nobel Prize-winning scientist whose work helped reveal the structure of the ribosome—the machine that makes every protein in your body. A young scientist asked what advice she would give. She replied, "I have one piece of advice: Don't ask for advice." She was right. You know yourselves better than I do. You should have confidence in your ability to solve your own problems. You made it here. The best predictor of the future is the past. You have already shown what you are capable of by being here today.”
We, the Weizmann Institute of Science community, deeply mourn the passing of Prof. Ada Yonath of the Institute’s Chemical and Structural Biology Department. Prof. Yonath pioneered the study of the ribosome, the cell’s protein factory, and was awarded the 2009 Nobel Prize in Chemistry for her research in this field. Her decades-long scientific journey led to an understanding of how various antibiotics work, helping pave the way for the development of new antibiotics and the fight against antibiotic-resistant bacteria. Yonath, the first Israeli woman scientist to win a Nobel Prize, also received dozens of other awards and honors, including the Israel Prize in Chemistry and the Wolf Prize in Chemistry. Prof. Yonath exemplified how scientific vision, the courage to choose a major scientific question and unwavering dedication to its pursuit can lead to extraordinary achievements and expand the boundaries of knowledge for the future of humanity. On Sunday, we had dinner at Des Petits Pois Sont Rouges, the restaurant at the Hôtel Miramont in Argelès-Gazost. The meal began with a series of beautifully presented small bites, followed by a cheese board featuring cheeses from the Pyrenees with dried fruit, nuts, and preserves. Then came a generous charcuterie platter made entirely with Porc Noir de Bigorre. The assortment included several styles of cured pork, each with its own texture and flavor. For my main course, I chose the Porc Noir pulled pork sandwich. It was filled with tender pulled Porc Noir, topped with a slice of Porc Noir bacon, onion compote, and a delicious barbecue sauce, then served with crisp frites. Rich, smoky, sweet, and savory… Dessert was a chocolate crème brûlée, topped with whipped cream, apricots, and a delicate chocolate garnish.

Well, our vacation in France is coming to a close. We checked into the one hotel near the airport for our 630a flight to Paris. It was cute, but the area was quite isolated.

When we got into town for dinner last night, this is what I heard. Unexpected, to say the least…😂

For our last meal in Argelès-Gazost, we saved the best restaurant for last. Tucked in the heart of town, Au Fond du Gosier is small, personal, deeply connected to the surrounding valley, and among the best in the region. The restaurant is run by Mathieu Beri-Ladrix in the kitchen and Céline Beri-Ladrix in the dining room, where she also brings her expertise as a sommelier. Together, they have created an intimate restaurant of only about 20 seats, allowing them to remain closely involved in every meal they serve. Michelin first selected Au Fond du Gosier for its guide and later awarded it a Bib Gourmand, recognizing restaurants that combine excellent cooking with particularly good value. It was the perfect way to end our stay: sophisticated food without pretension, served in a tiny neighborhood restaurant surrounded by the mountains and villages that supply so much of what appeared on our plates.

On the way back from Gavarnie, we stopped for lunch in Luz-Saint-Sauveur, a charming Pyrenean town known for its thermal-spa heritage, stone buildings, and dramatic mountain setting. It was the perfect place to rest, refuel, and reflect on the morning’s adventure. Hiking through the mountains by day, followed by fabulous lunches in beautiful villages each afternoon…I could definitely get used to this. Maybe it really is time to retire. 🤔
