I firmly believe its because the industry has switched to digital. Anime used to be cel animation, and those involved were highly skilled, artistic and put alot of care into their work along with constant repetition. Now that the medium is digital, you can really tell the difference, between a show that spent more production time on an episode/show, then a show that put in the minimum amount of time. In alot of ways, its become lazy with the help of computers speeding up the process,on the flip side, thanks to digital, we get to have more vibrant color palettes and unique colors in shows that couldn't be achieved with cel animation.
