👻🕸️HALLOWEEN DELIGHTS! 👻🕸️ ....................................................................... CRISPY MOZZARELLA BITES 🧀🎃 "Golden, Crunchy & Deliciously Cheesy" Servings: 4 Ingredients: 250 g mozzarella cheese, cut into bite-sized cubes ½ cup all-purpose flour 2 large eggs, beaten 1 cup breadcrumbs or panko breadcrumbs ½ teaspoon garlic powder ½ teaspoon Italian seasoning ¼ teaspoon paprika Salt and black pepper, to taste Oil, for frying ½ cup marinara sauce, for serving Sliced black olives, for decorating Instructions 1. Prepare the mozzarella: Cut the mozzarella into bite-sized cubes or small rounded pieces. Pat dry with paper towels to remove excess moisture. 2. Set up the coating station: Place the flour in one bowl, beaten eggs in a second bowl, and breadcrumbs mixed with garlic powder, Italian seasoning, paprika, salt, and pepper in a third bowl. 3. Coat the cheese: Roll each mozzarella piece in flour, dip it into the beaten eggs, and coat thoroughly with breadcrumbs. For an extra-crispy crust, dip it in the egg and breadcrumbs a second time. 4. Freeze briefly: Arrange the coated mozzarella bites on a tray and freeze for 30–45 minutes. This helps prevent the cheese from leaking out during frying. 5. Fry until golden: Heat oil in a deep saucepan to 175°C (350°F). Fry the mozzarella bites in small batches for approximately 1–2 minutes, turning as needed, until golden and crispy. Remove with a slotted spoon and drain on paper towels. 6. Create spooky faces: For a Halloween touch, let the bites cool slightly and decorate them with small pieces of black olive to create ghostly eyes and mouths. Alternatively, serve them as simple golden mozzarella bites. 7. Serve and enjoy: Serve immediately with warm marinara sauce or your favorite dipping sauce while the cheese is still soft and gooey. Serving Suggestions: Arrange the crispy bites on a platter with fresh parsley and a bowl of tomato dipping sauce. For a lighter option, bake or air-fry them until golden, following your appliance's instructions. Enjoy!🧀🎃

Just made this Balsamic Chicken Bake with Fresh Tomatoes, and it's incredibly flavorful! Juicy Balsamic Chicken with Tomato Herb Bake Ingredients: 4 boneless, skinless chicken breasts Salt and pepper to taste 2 tablespoons olive oil 1/4 cup balsamic vinegar 2 tablespoons honey 3 cloves garlic, minced 1 teaspoon dried basil 1 teaspoon dried oregano 2 cups cherry tomatoes, halved 1/4 cup fresh basil, chopped 1/4 cup fresh parsley, chopped 1/4 cup grated Parmesan cheese Directions: Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and pepper. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, dried basil, and dried oregano. Place the chicken breasts in a baking dish and pour the balsamic mixture over them, ensuring they are well coated. Scatter the halved cherry tomatoes around the chicken. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Remove the dish from the oven and sprinkle the fresh basil, parsley, and grated Parmesan cheese over the top. Let the chicken rest for a few minutes before serving.
