Ray Peat’s views on the gut (colon, microbiome) seems to hinge on the idea that reducing the amount of fermentable food that reaches the colon reduces “good” & bad bacteria in an equal amount or that this favors the good bacteria, & that SCFAs from the good are non-essential

A strange historical diet fact that puzzles me is how Ancient Greeks ate ±70% barley. They made bread (maza) or gruel. This constituted around 1750 kcal of barley daily, which comes down to 20-35 grams of beta-glucan every day! Compare: oats contain 2 grams in a good portion.
