Why do Mormons strongly insist they believe "God created all things" when they mean it in a sense that basically means 'God did not create all things'?

I wish I could run the following experiment. Give a billion people the BoM and the CES letter. Then put them in full isolation from any outside influence for a year. Then ask them at the end what they thought. What percentage would come out concluding the church is “true”?
