Oven-baked and braised beef ribs with mashed potatoes and fresh vegetables.
Pat the ribs dry and peel the membrane off the back so they don’t turn chewy. Rub with olive oil, Dijon (or any mustard), kosher salt, pepper, and paprika on both sides. Cover tightly with foil and bake 2 hours at 345°, then uncover and hit 400° for 15 minutes.
The meat barely needed any work. The mashed potatoes were the biggest hassle.
Shortcut: skip the mash and just nest sliced or small potatoes around the ribs. A little more prep up front, way less work at the end.
Perfect for a quiet workday dinner (and plenty of leftovers), or as a celebratory meal in the week.
