My guess is that the original anime adapted Zoro's backstory out of order, while One Pace places it where it happens in the manga. That's why they think Pace skipped Zoro's backstory.

Fishman Island-Zou were edited around a decade ago, so our skills were not as refined as they are now. We are redoing those arcs to improve them, but it'll take time.

The pacing never improves. It just gets worse. At least it's somewhat stabilized now, with the latest arc adapting a whopping 1 chapter per episode (approximately).
