This is the perfect holiday for cheesy goodness and cocktails to go along with it! Quesadillas are a staple in my house and so easy to make. I’m a flour tortilla girl and usually fill with beans and chicken. I’m sure I’ll add a margarita on the side. Yum! 😋

• Name: Quesadilla comes from Spanish queso (cheese) plus the diminutive -illa — literally “little cheesy thing.”
• Origin: Corn tortillas were already a Mesoamerican staple. Spanish settlers brought cheese in the 16th century; the two met and the quesadilla was born.
• Cheese fight: In most of Mexico the cheese is assumed. In Mexico City a “quesadilla” often means a filled folded tortilla — you have to specify con queso if you want the melt.
