🥢 Garnish game is weak, but this pork belly was simmered in stock and aromats for two hours, shallow fried at ultra high heat to crisp up the outside, then braised in soy, honey, and ginger marinade. Served on a simple fried rice. Zoom in on that!

Sliced a Bavette steak thinly across the grain. Rested in bicarb and cornstarch for 30 minutes. Blanched for 30–45s. Stir fried with broccoli, ginger, carrot, garlic, and a super umami mix of shaoxing, soy sauce, oyster sauce.
