Le piment d’Espelette. La seule épice sous AOP de France continentale. Il ne vient pas du Pays basque à l’origine, mais du Mexique. C’est un marin basque, Juan de Elcano, compagnon de Magellan, qui rapporte les premières graines de piment dans le golfe de Gascogne au XVIe siècle. Dans cette vallée protégée du Pays basque français, abritée du vent du nord par le relief et arrosée par l’océan, la graine trouve un microclimat idéal. On l’utilise d’abord en médecine, puis en cuisine pour remplacer le poivre noir, importé et trop cher. Les cuisinières l’incorporent dans les salaisons et le jambon de Bayonne pour le conserver et le parfumer. Au fil des siècles, la sélection manuelle fait le reste. La variété Gorria (« le rouge » en basque) s’impose : un piment doux, pas brûlant, noté 4 sur l’échelle de Scoville. Il offre une attaque fruitée, une pointe d’amertume sucrée et une chaleur progressive qui ne masque pas les saveurs. Dans les années 1960-1970, le produit s’essouffle face aux épices industrielles et à la mécanisation. Une poignée de familles de maraîchers réagit. En 1997, ils créent le syndicat du piment et obtiennent l’AOC en 2000, puis l’AOP européenne en 2002. Aujourd’hui, le cahier des charges reste intransigeant : dix communes seulement autour d’Espelette, pas d’irrigation hors plantation, cueillette exclusivement manuelle d’août à novembre, et séchage traditionnel à l’air libre sur les façades des maisons pendant au moins quinze jours avant la maturation au four. Chaque automne, le village d’Espelette se couvre de guirlandes rouges séchant sur les murs en torchis. Un piment qu’on avait presque oublié, qu’on a eu la sagesse de garder dans les jardins.

Quindi, quando Giorgia Meloni @GiorgiaMeloni sostiene che l’Italia abbia il diritto di difendere la propria identità e di richiedere che i volti restino visibili nelle scuole, giudicate questa posizione per ciò che realmente sostiene. E da arabo musulmano, non posso fare a meno di sorridere quando una parte della sinistra italiana cerca di essere più musulmana dei musulmani e più araba degli arabi. Paesi a maggioranza musulmana come l’Egitto e la Tunisia hanno imposto restrizioni sul fatto che i bambini possano coprirsi il volto nelle scuole. Allora perché, se in una scuola italiana si richiede che un insegnante possa vedere il volto di uno studente, questo dovrebbe improvvisamente essere considerato ostilità verso l’Islam? Non potete pretendere che l’Italia sia più permissiva, sul piano religioso, degli stessi Paesi musulmani e poi definire gli italiani intolleranti semplicemente perché pongono delle domande. No, proteggere le vostre scuole non è «islamofobia». Contrastare l’estremismo islamista non è «islamofobia». I Fratelli Musulmani hanno creato il termine «islamofobia» per impedire alla vostra democrazia di criticare gli islamisti radicali e per indurvi a chiamare un terrorista «attivista». La parola «islamofobia» non deve mai diventare un telecomando con un tasto “muto” per ogni discussione scomoda sull’islamismo. È qui che una parte della sinistra italiana capovolge clamorosamente la questione: nel tentativo di dimostrare a tutti i costi la propria tolleranza, rischia di trattare l’identità stessa dell’Italia come l’unica identità che debba continuamente chiedere scusa. Non spetta ai Fratelli Musulmani stabilire i confini del dibattito europeo. Perché state cercando di avere più estremisti musulmani del Medio Oriente? L’Italia non ha bisogno del permesso di nessuno per restare italiana. L’Italia non è «Italianistan». È l’Italia. Bella. Antica. Fiera. Libera. Roma è sopravvissuta agli imperi. L’Italia non dovrebbe avere paura delle etichette.
