The cows roam openly on open Arizona land for three years/to maturity, and then grain finished for 200 day in Red Rock, AZ. The finishing lot adds natural forage to their feed to assure nutrient balance as well as fat development. They are also honest and transparent about GMO feed sources, and the fact they cannot guarantee if the feed suppliers are sourcing GMO Corn or not, and that 100% availability of non-GMO corn is never guaranteed in the supply chain, so they make a best effort and o ly deal with reputable suppliers (indirectly, through the Red Rock Feed Company) that finishes their cattle. No other rancher could even make such a statement, so to put that reality in print with such clear transparency scored a lot of credibility with me. The last bit is key: Capital has their own USDA slaughterhouse/packing facility. So the hamburger in my freezer is from the cow I purchased, not mixed with 7,000 other random cows. The other Arizona ranchers outsource slaughter & butchering to centralized services, and there is no guarantee you'll end up withall the same beef from the same cow as the packages come out of the other end. I am not paid or sponsored or endorsed or even known to Capital outside of my recent customer relationship. Buying a year worth of food is major investment. Buying a half cow is a high risk investment if you don't know what the quality or consistency will be until after the delivery truck drives away. I am sure there are other excellent cattlemen and suppliers, we just wanted to make sure we were buying Arizona Beef from an Arizona Rancher with Arizona workers. I'm happy when I know what I can expect. Who knows how much beef will be in a month or next year? This was among the final major purchasing decisions we made to assure our self reliance in hard times. The augmentation to this was assuring we have relia le fail-over freezer capacity and backup power for all of our refrigerators and freezers. That was the easy part.
