Honestly, I have no idea how. I really just half-ass shaping, I am shocked every time it comes out looking that nice!
I had not baked for a couple of weeks because it's been way up in the 90s and 100s, then the temp dropped, so I thought I'd bake again!
I was surprised that my refrigerated starter grew as quickly as it did when I fed it.
