Talking to @supriyan, I recently realised that all of our hometowns - sometimes even neighbourhoods - had a local potato chip brand that was FAR superior to anything Lays or Pringles or anyone else will ever make. I grew up in Pune, and this is my definition of a chip.

In Gujarat Balaji wafers has been more popular than Lays for at least 17-18 years now (that's as far as my memory goes). It's altogether another story that Balaji is now a nationally well known brand 😁

They are an absolute favourite, and the history of their move from Bhuj to Pune is also interesting. Also, only a few brands call themselves "Waferwala" today, since the term "wafer" is rarely used and has been replaced by "chip". budhanibros.com/about.php

when did they start pre-packed in airtight plastic packaging? Most cities had wafer/chips shops (in chennai that was madras bakeries and some sweet shops wld also sell them by weight) ... Hot Chips, early 1990s, was the first "brand", but not pre-packed.

.Such local brands used to have chips with little air in the packet. Now we have a packet of air with a few chips thrown in.

Madras had its Hot Chips! Sizzling wafers made and salted in front of you! Also banana chips and an assortment of other mouthwatering stuff! They had trays of each variety displayed which you could dip into while waiting for your order to be packed!

Love Budhani— would ask my friend in Pune to bring it to Delhi whenever she visited home! Lays, Pringles are also synthetic tasting and too salty. I grew up having yummy chips from a local shop near Sindhi Society in Chembur. They used to make it fresh daily.
