French Onion Meatloaf with Melted Swiss Cheese

Ingredients
For the Meatloaf:
2 lbs (900g) ground beef (80/20)
1 cup breadcrumbs
2 large eggs
½ cup whole milk
1 packet (1 oz) French onion soup mix
1 tsp Worcestershire sauce
1 tsp garlic powder
½ tsp black pepper
¼ tsp salt
For the Caramelized Onions & Mushrooms:
2 tbsp unsalted butter
2 large onions, thinly sliced
8 oz (225g) cremini mushrooms, sliced
2 cloves garlic, minced
1 tsp fresh thyme leaves
Salt and black pepper, to taste
For the Topping & Glaze:
6 slices Swiss cheese
½ cup beef broth
2 tbsp balsamic vinegar
1 tbsp Worcestershire sauce
1 tsp cornstarch + 1 tbsp water (slurry)
6 slices bacon, cooked and crumbled
Fresh thyme, for garnish
Instructions
Caramelize the onions. Melt butter in a large skillet over medium-low heat. Add sliced onions and cook 20–25 minutes, stirring occasionally, until deeply golden and sweet. Add mushrooms and cook 5 minutes more. Stir in garlic and thyme, season with salt and pepper, cook 1 minute. Set aside half for the topping.
Make the meatloaf. Preheat oven to 350°F (175°C). In a large bowl, combine ground beef, breadcrumbs, eggs, milk, soup mix, Worcestershire sauce, garlic powder, pepper, salt, and half the caramelized onion mixture. Mix gently until just combined.
Shape. Transfer mixture to a greased loaf pan or shape into a freeform loaf on a parchment-lined baking sheet. Press to firm it up.
Bake. Bake 45 minutes. Remove from oven and drain off any excess fat.
Glaze. In a small saucepan, combine beef broth, balsamic vinegar, and Worcestershire sauce. Simmer 2 minutes, then whisk in cornstarch slurry and cook until thickened. Brush half the glaze over the meatloaf.
Top and finish. Lay Swiss cheese slices over the top, then pile on the reserved caramelized onions and mushrooms. Sprinkle with crumbled bacon. Return to oven for 12–15 minutes until cheese is melted and bubbly.
Rest and serve. Drizzle with remaining glaze, garnish with fresh thyme, and rest 10 minutes before slicing.
Tips
Don't rush the onions — slow caramelization is where all the flavor lives.
Mix gently — overworking ground beef makes a dense, tough loaf.
Rest before slicing — it holds together and stays juicy.
Variations
Use ground turkey or a beef-pork blend instead of all beef.
Swap Swiss for Gruyère or provolone.
Add a splash of red wine to the glaze for deeper, more classic French onion flavor.
