I harvested four basil plants last night to make pesto, freezing the surplus in an ice cube tray to use in recipes all year.
Food processor: 4 cups leaves; 3/4 cup grated parmesan; 3/4 cup pine nuts & cashews; 2/3 cup EVOO; 4 cloves chopped garlic; 2 tbs lemon juice; & salt.

Last night Spaghetti: fry garlic, lemon zest; cleaned frozen squid. Sauce: San Marsano can tomato, evoo, oregano, parmesan; white wine & IPA; corn starch.
Tonight Costo fresh Ahi.
Sesame oil; tahini; fresh ginger; soy sauce for salt. Coat & press in sesame seeds.
Hot cast iron.

Last night I electric smoked 15 lbs of pork butts - Michael Symon.
Injection brine baster. Then dry rub.
5 hours at 225 until crusty.
Wrap tight in foil, overnight low & slow.
Raise temp in AM til meat reaches 195.
I did 20 hrs on low. Baste in cider.
My pulled pork = great.

Deli prime beef hot dog, chargrill & drag thru garden: celery & poppy seed, jalapeño, cucumber, tomato, lettuce, pickle, shallot.
Oven fries. Slice fresh spuds, soak in ice water; drain & pat dry. On parchment lined baking sheet, pour evoo & toss.
425 for 40 minutes.

110 miles & 32,000 ft vertical elevation gain. Dining & sleeping in small towns along the way, with fresh clothes awaiting them 3 times.
