Smoke a picnic ham until it stalls then simmer it until all the gelatin and everything dissolves and forms a gravy with some bbq seasoning, and tangy bbq sauce. We are about 15 hours in. 7 on the pit and 8 on the stove. I just have to boil off some water at this point and add the sauce.

Whenever I see an ambulance pull up to a grocery store I assume that someone went to check out meat prices. Would rather spend a bit more and the get the real A5 from Japan, a little goes a long way.

“American wagyu” is pretty much a joke as they can market it as wagyu with negligible cross breeding or proof. As I’m sure you’re well aware. Why not just buy really good Angus beef or just buy direct?
