Only two Indian restaurants made Asia's 50 Best this year. One is Masque in Mumbai. The other is a 16-seater tucked into the hills near Kasauli.
NAAR, Chef Prateek Sadhu's restaurant at Amaya (an SLH property), came in at #30, up from #66 last year.
Built on old farming terraces. 14-15 courses, and the menu changes with each of the six Himalayan seasons.
Every course felt thoughtful but still rooted in the mountains. NAAR means fire in Kashmiri, and you can kind of taste that.
Definitely not your usual "hotel restaurant" experience.
Pro tip: don't do it as a day trip.
Stay at Amaya, have dinner, and sleep it off in the hills.
