Where did you hear that contrails only form above 40,000 ft? Most planes do not travel that high? Range is usually 30-40k
Contrail formation can be predicted with an online tool.

No, ships don't disappear below the horizon according to the globe. The bottom of the ship sometimes (about 60% of the time) becomes invisible for optical reasons, due to the upward bending of light. There is no quantitative correspondence with the globe.
