2/ Serious trading begins just before US markets open, in line with the build-up to the opening auction in tradfi. Auction pricing gives onchain traders something to react to before the opening. Similarly, activity increases around the close, in line with the closing auction. On weekends and holidays, activity is muted regardless of the time of day.
